- 1 cup coarse sea salt or kosher salt
- 2 tablespoons dried rosemary
- 2 tablespoons dried oregano
- 2 tablespoons dried basil
- 1 tablespoon dried thyme
- 1 tablespoon dried parsley
Important: Make sure all of your herbs are completely dry before making this seasoning. Any remaining moisture can cause the mixture to clump and can shorten its storage life.
How to Make Italian Herb Salt
1. Prepare the herbs
If you’re using herbs from your garden, make sure they are thoroughly dried before beginning.
Strip rosemary leaves from the stems and measure the dried herbs. If your herbs are still fresh, dry them completely before proceeding.
2. Combine the herbs and salt
Add the coarse salt and dried herbs to a food processor.
Pulse several times until the herbs are finely chopped and evenly distributed throughout the salt. Don’t process it into a completely fine powder—you want some texture remaining.
3. Dry the mixture
Spread the Italian herb salt onto a parchment-lined baking sheet in an even layer.
Allow it to air dry until completely dry, stirring occasionally.
If needed, you can use a food dehydrator on a low setting to remove any remaining moisture.
4. Store your homemade seasoning
Once the herb salt is completely dry, transfer it to a clean, airtight jar.
Store it in a cool, dry pantry away from heat and moisture.
