If you have fresh rosemary growing in your garden, this lemon rosemary herb salt is a simple way to preserve some of that flavor for later.

The combination of bright lemon and earthy rosemary makes this salt especially good for summer vegetables, roasted potatoes, chicken, fish, and homemade bread.
It’s one of those little homemade pantry staples that can make an ordinary meal taste like you put in a lot more effort than you actually did.

What You’ll Need
- 1/2 cup coarse sea salt
- 2 tablespoons fresh rosemary leaves
- Zest of 1 lemon
Use a lemon with a nice, fragrant peel and zest only the yellow outer layer, avoiding the bitter white pith.
How to Make Lemon Rosemary Herb Salt
Remove the rosemary leaves from the stems and add them to a food processor with the sea salt and lemon zest.
Pulse several times until the rosemary and lemon zest are finely chopped and evenly mixed throughout the salt. Don’t process it until it’s completely powdery—you want some texture left.
Spread the mixture onto a parchment-lined baking sheet.

Let it air-dry completely, stirring it once or twice a day. Depending on the humidity, this may take a couple of days.
You can also dry it in a very low oven if you prefer.
Once the mixture is completely dry, transfer it to a clean, airtight jar.
How to Use Lemon Rosemary Herb Salt
This is one of my favorite herb salts for cooking because the lemon gives it a little brightness without needing to reach for fresh lemon every time.
Try it on:
- Roasted potatoes
- Chicken
- Fish
- Roasted vegetables
- Green beans
- Fresh tomatoes
- Salads
- Homemade bread
- Pasta
- Grilled vegetables
It’s especially good sprinkled over vegetables with a little olive oil before roasting.
