If you have a few dried herbs in your pantry, you can turn them into a simple Mediterranean herb salt that’s useful for all kinds of everyday cooking.

I love making herb salts because they’re such an easy way to preserve the flavors of the garden.
This Mediterranean version is especially good when you want something savory and herby without having to measure several different seasonings every time you cook.
It’s wonderful on roasted vegetables, potatoes, chicken, fish, salads, homemade bread, and even tomatoes with a little olive oil.

What You’ll Need
- 1/2 cup coarse sea salt
- 2 tablespoons dried oregano
- 1 tablespoon dried basil
- 1 tablespoon dried rosemary
- 1 tablespoon dried thyme
- 1 tablespoon dried parsley
- 1 teaspoon garlic powder
You can adjust the herbs to suit your taste. If you’re using herbs you’ve dried yourself from the garden, even better.
How to Make Mediterranean Herb Salt
Add the sea salt, dried herbs, and garlic powder to a food processor or spice grinder.
Pulse several times until the herbs are finely chopped and the mixture is evenly combined. You don’t want to turn the salt into a fine powder—it’s nice to have a little texture left.

Pour the mixture into a clean, completely dry jar and seal tightly.
That’s it.
I like to let the mixture sit for a day or two before using it so the flavors have a chance to mingle.
How to Use It
This is one of those homemade seasonings that can go on almost anything.
Try it on:
- Roasted potatoes
- Grilled or roasted vegetables
- Chicken
- Fish
- Fresh tomatoes
- Salads
- Homemade bread
- Pasta
- Rice
- Soups and stews
It’s also really good sprinkled over vegetables with a drizzle of olive oil before roasting.
