Muffin Mix Recipe
Ingredients:
- 8 c. flour*
- 3 c. sugar
- 3 tbsp. baking powder
- 2 tsp. salt
- 1 tbsp. cinnamon
*You can substitute wheat flour for the white flour if you like, or substitute part of the white flour with another kind of flour. In my mix I used 6 c. white flour and 2 c. oat flour.
If you are wanting to make a gluten free muffin mix, then substitute your favorite gluten free flour blend instead. Just make sure it doesn’t already have baking powder added to it.
Muffin Recipe
- 2 3/4 c. muffin mix
- 1 egg, lightly beaten
- 1 c. milk
- 1/2 c. butter or margarine, melted
This recipe makes a basic muffin. You can customize this recipe by adding 1 cup of blueberries, chopped apples, cranberries, raisins, chocolate chips, etc.
Preheat your oven to 400 degrees. Stir all ingredients together in a bowl until blended. Fill muffin tins 2/3 full and bake for about 20 minutes, or until a toothpick comes out clean.
